Why Tempeh Sodium Varies So Much

Tempeh starts out as fermented soybeans, and the fermentation process itself does not add sodium. The variation comes almost entirely from what happens after fermentation: soaking or brining, adding salt or soy sauce during cooking, and flavoring with marinades, tamari, or seasoning mixes.

Estimated sodium (mg) = portion weight (g) × sodium per 100 g ÷ 100
